What in the world is Chia?

All that comes to mind is a "chia pet". Now that I am living in Nicaragua, I have discovered this healthy little seed. Chia is the seed from a mint plant that has many health benefits. They contain Omega 3 fatty acids, alpha-linoleic and linoleic acid, mucin, strontium, 30% protein, Vitamins A, B, E, and D, and minerals including calcium, phosphorus, potassium, sulphur, iron, iodine, copper, zinc, sodium, magnesium, manganese, niacin, thiamine, silicon, and anti-oxidants.

I like to soak them in water where they become gelatinous and then I add them to smoothies and recently I have discovered how to use them in baking.

These banana muffins are delicious!!

Try it you wil not regret!!

2 cups whole-wheat flour
1-cup wheat bran
1 1/2 tsp. baking soda
2 tsp. cinnamon
1/4 tsp. salt
¼ cup chia seeds
3 eggs
3/4 cup milk
3/4 cup unsweetened applesauce
1 tsp. vanilla extract
1/2 cup agave nectar
4 ripe bananas, mashed
1 1/2 TBS coconut oil
1 cup chopped walnuts

2 tsp. cinnamon
2 tsp. brown sugar
Walnuts, chopped

Bake at 350 for 10 minutes. Makes 20 muffins
