Scallion and Goat Cheese Frittata

This week I got some delicious organic leeks from Selva Negra and decided to make a leek and goat cheese frittata. I love living in Nicaragua because the vegetables and fruits are so fresh and nutritious. Leeks are rich in vitamins A, C, E and all the forms of B. They are full of antioxidants and also contain allicin which reduces blood pressure.

Make this simple and delicious recipe!!!

3 Tbs. butter
2 Tbs. olive oil
3 large scallions chopped
Kosher salt
6 large eggs
Freshly ground black pepper
1 tsp. chopped fresh thyme
3 oz. goat cheese, crumbled

Sautee scallions until soft. Beat eggs and add to pan, add cheese and spices
Cook until set.
