Mango Season!!!

This is such an exciting time of year to be living in Nicaragua.

The reason I say that is that Mango season is starting! I've always loved mangoes.

When I was pregnant with my first daughter and lived in the US I would drive to the store in the middle of the night to get mangoes. I guess that is why I am so excited to pick fresh mangoes slice them and eat them. They are delicious ripe and sweet. I also enjoy fresh mango salsa with chicken or fish. The secret is to make it 8 hours before serving.

Mango Salsa

1 cup diced mango
1 cup ripe chopped seeded tomatoes
1/2 cup finely diced cilantro
1/2 cup finely diced red onion
1 tsp diced garlic
salt and freshly ground pepper to taste
1 chili pepper seeded and finely diced
