Delicious Recipe of Coconut Pancakes

I never really ate coconut until I started living in Nicaragua. Shortly after moving here I began to hear about how coconuts are the new super food. Now I drink the water and use them in smoothies and cookies. I even put the oil on my skin after my shower.

Last year when we went to the Little Beach and Bungalow on Little Corn Island we discovered how delicious coconut pancakes are.

My kids love them and you will too.

Make your Coconut Pancakes!!!

1¼cup all-purpose flour
2 TBS sugar
1 tsp. baking powder
½ tsp. baking soda
¼ tsp. salt
¼ cup shredded coconut
1 egg beaten
1¼ cup coconut milk
1 tablespoon melted butter
