One of the things I love most about living in Nicaragua is that I discovered a new fruit this week. It is called "cas" in Spanish, the latin name is psidium friedrichsthalianum and is known as "sour guava" in English. It looks like a small green guava.
My good friends from Selva Negra sent me a basket and I had to find something to do with them. After some investigation I found that they can be made into a delicious healthy juice. I whipped up a pitcher and boy was it refreshing! Cas is in season December to February as well as July until August.
It is rich in fiber, has 4 times the vitamin C of oranges and is full of antioxidants.
Recipe for "Jugo de Cas"
Organic cane Sugar
Wash and peel 5 cas
Blend on low speed until the fruit is a paste
Mix in 7 cups of water
Strain the pulp
Add sugar to taste
Chill and enjoy!!
